Gilroy’s Loft & The Porter’s Table: No-waste food philosophy and perfect pours

Guinness Open Gate Brewery London is set in Covent Garden’s historic Old Brewer’s Yard, blending modern brewing with tradition. The site features a tour, two shops, a courtyard serving pies by Calum Franklin, and two restaurants led by award-winning chef Pip Lacey.

Rooftop seafood restaurant Gilroy’s Loft offers a seasonal, coastal-inspired menu celebrating British and Irish produce, named after Guinness ad artist John Gilroy, whilst The Porter’s Table is a relaxed, grill-led restaurant focused on British ingredients, with beer poured fresh from the on-site microbrewery by Master Brewer Hollie Stephenson.

The launch campaign positioned both restaurants distinctly while raising Pip Lacey’s profile through key media coverage and a supplier-led press trip to Ireland’s west coast, highlighting partnerships with independent oyster farmers and a commitment to quality produce.
